Who knew that Austin was chock-full of bakery cases brimming with scrumptious treats for four-legged friends? Get a special something for birthdays, as an alternative for chicken soup after a long day at the vet, or just because. We never need an excuse to pamper our pets with healthy bites.

Lofty Dog’s bakery case is brimming with locally made treats from Paws Bakery. You may have seen owner Jasmine’s cute cookies and clever doglipops (a peanut butter cookie at the end of a rawhide stick!) at the downtown farmer’s markets. Now you know—you can pick them up seven days a week at Lofty Dog. While you’re there, why not give your canine a meal she can really sink her teeth into? On your way by the bakery case, you’ll see a freezer full of raw meals. Stella and Chewy’s frozen and freeze-dried dinners are what all the healthiest pups are barking about. The people in Wisconsin who make these meals utilize only hormone-free meats, organic fruits and veggies and essential probiotics. The family who runs this boutique has everything and hopes to become the meeting spot for central Austin pups this spring when they open their new location on Anderson Lane.

Many boutiques around town, including Wheatsville Co-op, Dogtopia, Tarrytown Pharmacy, Zoom Room, go local by supporting Brothers Barkery out of Marble Falls. The European-style bakery (they make human treats under the name Brothers Bakery) oven-bakes their corn, wheat and soy-free doggie delights. For your next special event, don’t leave out the dog invitees! Whip up a batch of these simple sandwich cookies and customize as needed. The cream cheese filling listed below can easily be traded for peanut butter or sugar-free preserves for the sugar-conscious among you.

INGREDIENTS

1 1/4 cups whole wheat flour 1/2 cup carob powder
1 tsp. baking soda
1/4 tsp. baking powder

1/4 tsp. salt
1 large egg, beaten
1/2 cup sugar
1/2 cup unsweetened applesauce
8 oz. low-fat cream cheese, at room temperature 1/4 cup fat-free milk
1 tsp. vanilla extract

PREPARATION

1. Preheat oven to 375° F
2. Line two baking sheets with parchment, and place in the oven as it preheats.
3. In a large bowl, whisk together the first five ingredients.
4. Stir the sugar and applesauce into the beaten egg.
5. Make a well in the dry ingredients. Pour in the applesauce mixture.
6. Stir until combined. The mixture will be very moist.
7. Remove one baking sheet from the oven. 8. Scoop a rounded teaspoon full of the cookie batter onto the baking sheet, keeping it as round as possible. Repeat until you have approximately 30 balls of batter. Bake 10 minutes.
9. While the first sheet is baking, repeat the scoop and pour method of placing the cookie batter onto the second sheet (ap- prox. 30 balls). Bake them for 10 minutes. 10. Let cookies cool a few minutes on the baking sheets before removing. Allow cookies to finish cooling on wire rack.
11. For the filling: Using a hand mixer, combine the cream cheese, milk and vanilla until smooth. For a thick layer of filling, use a leveled tablespoon. Spread the filling onto the cookie in an even layer. Gently press a second cookie on top of the filling to create 30 delicious doggie desserts—perfect for a party!

STORING

Keep refrigerated for one week, and in the freezer for up to 6 months.
